A Cup Of Lentils A Day

Lentils are one of the most underrated and underused foods out there!

Just one cup has 89% of the folate needed for the day, along with 36% of the iron needed.

One cup of lentils also has 18 grams of protein, which is 36% the daily recommended value, and 15 grams of fiber, or 63% of the daily recommended value.

For vegans, and vegetarians, this is great news, but meat eaters should take note as well. With the increased rates of cardivascular disease in this country, everyone needs to look for better sources of protein. “Better” meaning, lower in fat and calories, and higher in nutrients.

For women who are menstrating or pregnant, lentils will be a huge help to restoring energy.

In the next few weeks I’ll be posting lentil recipes, but for now I updated my black bean burger recipe to include lentils and it’s amaz!

Lentils are obviously great for kids as well, and thanks to their relatively bland taste, you can just throw a little of their favorite dressing on them, and they are sure to eat them. Even if they only eat a half a cup, that will go a long way nutritionally.

For optimal absorption, plant based sources of iron should be taken with some form of vitamin C, so have some  orange slices or other fruit on the side.
