Quick, Healthy, Delicious Pancakes

We make these pancakes almost every morning! Noah and Henry both love to make them, and eat them.

I did the show with Noah during Henry’s nap because Henry is a man of few words and all the “uh, uh, uhs” may have been a little distracting.

After you make it once and you know what to do, it only takes about 3 minutes to make them.

Before I start, I preheat the oven to 200 with a plate or cookie sheet in there so I can keep the pancakes warm as I make more.

I make a lot of silver dollar pancakes, because the larger ones are difficult to cook all the way through with this recipe.

It’s high in fiber, protein and omegas so it’s not only a fun way to start the day, but healthy as well!

P.S. In case you’re wondering, yes my son is wearing a pirate costume – never occurred to me to mention it on camera as it is a normal and regular occurrence in our house.


1.5 cups of rice milk

1 Cup Spelt Flour (5 g Protein, 2 g fiber per 1/4 cup, 6% Iron)

1/3 Cup White Whole Wheat Flour (4g Protein, 3 g Fiber per 1/4 cup, 8% Iron)

1 tablespoon sugar

1 teaspoon banking powder

1 teaspoon vanilla extract

2 tablespoons oil (sometimes I skip this)

1/3 Cup wheat germ

1/3 – 1/2 cup ground seeds or flax – I use Linwoods Flax, sunflower, pumpkin and sesame seeds with goji berries. (5 g protein, 6 g fiber per 4 tablespoon, 35% B12, 8% Iron).

A pinch of salt


In a blender, combine all the ingredients (start with the milk).

Heat the skillet for a few minutes, then pour the mix into small silver dollar pancakes. Flip when they begin to bubble and serve!
