I’m not a huge fan of peanut oil because peanuts tend to be high in mold content, but I do find myself sometimes craving
a peanut flavored dressing for my salad. This one is delicious for when that craving strikes.
Spinach Salad with Peanut/Miso Dressing!
- 1 tbsp white miso
- 1 tbsp Dijon mustard
- 1/2 tbsp xylitol
- 1 tsp balsamic vinegar (optional)
- 2 pinches salt
- pepper to taste
- 3-4 tbsp peanut oil
- Combine all the ingredients (minus the peanut oil)
- After they are well mixed, add the peanut oil a tablespoon at a time.
- Whisk it all together and add a little hot water if it’s too thick.
