Acai bowls are everywhere lately, and they are not cheap. My son loves them so I decided to try to make them at home. As usual, it is far easier than I thought, and I wish I did it sooner.
Acai is known as a superfood for good reason. They are loaded with antioxidants. Acai berries contain a good amount of minerals like potassium, manganese, copper, iron, and magnesium. They are rich in B-complex vitamins and vitamin-K. Niacin, vitamin B-6 (pyridoxine) and riboflavin. Primary research studies suggest that ellagic acid in acai has anti-proliferative properties by virtue of its ability to directly inhibit DNA binding of certain carcinogens (nitrosamine toxins) in the food.
Adding raw granola and coconut gives this breakfast enough healthy fats to get you to lunch without being hungry. The toppings for this are endless because almost anything goes well with it. You could through in some chia or hemp. Goji berries are great as well.
Acai Bowl
Ingredients
- 2 frozen organic Acai packets
- 1/2 cup nut milk
- 1/2 cup raw granola
- 1/4 cup shredded coconut
- berries of your choosing
Instructions
- Hold the packets under warm water for a few seconds. Cut them open and place in a high speed blender with nut milk. Don’t blend too long or it will get too watery.
- Pour into a bowl and top with granola, coconut and berries. Serve immediately so it doesn’t melt and get too watery.
