Mama Mia Quesadilla!

This Quesadilla Recipe it all – healthy, easy, quick and fun to make!

I used out Penini maker, but you can also use a flat grill, or pan.

In a matter of minutes you can have a warm, healthy meal full of protein and fiber.

When I made this video we were not vegan, so we now make it using vegan alternative cheeses and vegan sour cream.

Here’s how……


  • Diaya or Galaxy Vegan cheese
  • Whole wheat flour tortilla
  • 1 can organic black beans
  • 2 cups brown rice
  • Sour cream alternative like tofutti
  • 1 ½ tablespoons cumin
  • 1-2 tablespoons garlic powder

Black Bean Filling:

Mix together the rice and beans. Then add cumin and garlic and mix well together.


Spread sour cream alternative on ½ of the tortilla. Put rice cheddar on top of the sour cream.

Put the rice/bean mixture on top of the cheese, fold in half, spray with butter alternative or vegetable oil and put on the panini maker for about 3 minutes.

If you don’t have a panini maker you can put a little oil on both sides of the tortilla and brown each side in a frying pan until it turns golden.
