Superfood Pancakes!

Ever since I stopped giving my kids cereal in the morning they have not gotten sick. Check out the post I did a few months ago and you may want to do the same if you haven’t already. I think I quit cereal sometime in the fall in an effort to give up processed foods, and I think that was the one of the last pieces of the puzzle for us to get our health where I want it to be.

I ALWAYS start my morning out with my GREEN SMOOTHIE, and then I either make pancakes, waffles, smoothies, or oatmeal for my husband and the kids.

This pancake recipe is similar to one I posted a while ago, but I added some superfoods for extra calcium, omega-3s, and fiber!


1.5 cups of hemp milk (tons of calcium, and omega-3s)

1 banana

1 Cup Spelt Flour (5 g Protein, 2 g fiber per 1/4 cup, 6% Iron)

1/3 Cup White Whole Wheat Flour (4g Protein, 3 g Fiber per 1/4 cup, 8% Iron)

1 tablespoon raw honey, or maple syrup

1 teaspoon baking powder

1 teaspoon vanilla extract

2 tablespoons oil (sometimes I skip this)

1/3 Cup wheat germ

1/3 – 1/2 cup ground seeds or flax – I use Linwoods Flax, sunflower, pumpkin and sesame seeds with goji berries. (5 g protein, 6 g fiber per 4 tablespoon, 35% B12, 8% Iron).

1.3 cup ground chia seeds (fiber, omega-3s, calcium, phosphorus, magnesium, manganese, copper, iron, niacin, and zinc).

A pinch of salt


In a Vitamix/blender, combine the milk and the banana. Then add the rest of the ingredients and blend. Add more milk if it’s too thick.

Heat the skillet for a few minutes, then pour the mix into small silver dollar pancakes. Flip when they begin to bubble and serve!
