French Toast

French Toast

This French Toast is so great! It’s from ‘Vegan Comfort Food’ and it does in fact comfort!

It tastes like cider mill donuts crossed with french toast, and it’s easy to make.


1 cup rice milk (or soy, whatever you have around)

1/4 cup chickpea flour

1/4 teaspoon ground cinnamon

1/4 teaspoon nutmeg

1/2 teaspoon vanilla extract

Canola Oil

6 pieces whole grain bread


1) In a shallow dish (or any dish you like to use to dip the bread in after the mixture is complete) whisk together the milk and flour until there are no lumps.

2) Add the cinnamon and nutmeg

3) Add the vanilla extract

4) Dip the bread in the mixture, coating both sides

5) Spray some Pam on the skillet and drizzle some canola oil on it as well (or just grease with oil if you choose, but it will add more fat/calories)

6) Cook on low to medium heat and keep an eye on it. This is the key to making this dish work. You want to prevent it from sticking to the pan, so you may need to add small amounts of oil as you go. You also want to make sure it cooks gradually enough to become crisp. If you try to hurry this dish, it will be soggy.
