Whole Grain Banana Waffles

So, I’m on a little bit of a breakfast kick lately. Not sure if you’ve noticed, but I tend to do that. I’ll do desserts everyday for a month, and then salads the next month.

Anyhow, now I’m all about breakfast, and how to avoid cereal.

This is a quick waffle recipe that you can make in your blender, or vitamix, the night before so it only takes a few minutes to cook them in the waffle maker in the morning.

If you’re in a huge hurry in the morning, these are good enough to eat plain in the car on your way out to wherever you’re going.

If you like whipped cream, but don’t like soy, there is a great whipped cream made from rice, by SoyaToo that you can usually find at Whole Foods.


1 cup whole wheat white flour

1 cup whole wheat flour

1 tablespoon baking powder

1 teaspoon salt (kosher or Celtic sea salt)

Egg substitute equivalent to 3 eggs – I like Ener-g egg replacer

1 1/2 cups rice, hemp, coconut or almond milk

2 ripe bananas

3 tablespoon Earth Balance non-dairy butter

2 tablespoons honey or maple syrup


Put the Ener-G egg replacer, bananas, butter, salt, and honey in the vitamix and blend until the bananas are mush.

Then add one cup of flour and the milk. Blend, and then add the other cup of flour and baking soda, and blend.

You may need to add a little more milk at this point.

Pour mixture into your waffle iron until cooked the way you like it.
