Red Pepper Soup

Ingredients

  • 3 tbs olive oil
  • 1 medium red onion (diced)
  • 1/2 medium sweet potato (peeled and diced)
  • 1 medium Yukon potato (peeled and diced)
  • 1 large shallot (diced)
  • 1 tsp ground cumin
  • 1 pinch red pepper flakes
  • 1 clove minced garlic
  • 6 cups low sodium chicken broth
  • 2 large red peppers (diced)

Instructions

  • Heat oil in a large pot over medium heat
  • Add red onion, sweet potato, Yukon potato, and shallot. Cook for 5-7 minutes.
  • Add cumin, red pepper flakes, and garlic. Saute 3-5 minutes.
  • Add broth, bell peppers, and bring to a simmer.
  • Cover and cook for 30 minutes.
  • Blend in batches in your blender (preferably a high-speed blender like a vita-mix), and serve.
