Red Pepper Soup

Yukon potato

(diced)

ground cumin

red pepper flakes

minced garlic

low sodium chicken broth

red peppers
(diced)
Instructions
Heat oil in a large pot over medium heat
Add red onion, sweet potato, Yukon potato, and shallot. Cook for 5-7 minutes.
Add cumin, red pepper flakes, and garlic. Saute 3-5 minutes.
Add broth, bell peppers, and bring to a simmer.
Cover and cook for 30 minutes.
Blend in batches in your blender (preferably a high-speed blender like a vita-mix), and serve.
