Spinach Salad with Peanut/Miso Dressing!

Ingredients

  • 1 tbsp white miso
  • 1 tbsp Dijon mustard
  • 1/2 tbsp xylitol
  • 1 tsp balsamic vinegar (optional)
  • 2 pinches salt
  • pepper to taste
  • 3-4 tbsp peanut oil

Instructions

  • Combine all the ingredients (minus the peanut oil)
  • After they are well mixed, add the peanut oil a tablespoon at a time.
  • Whisk it all together and add a little hot water if it’s too thick.
