I know a Paleo post on a vegan website may seem strange, but I’m actually going to be posting quite a few in the upcoming weeks. Paleo desserts are low glycemic, grain-free, easily digestible, dairy-free and delicious.
But, yes, there are eggs and honey. I haven’t posted in the past two years due to having a third child. He’s wonderful, but he’s also taken up any free time I once had. During that time I’ve done a lot of research on health and nutrition, as usual, but I’ve changed some of my views. I’ll do a more in-depth post on that in the near future. For now, I’ll just say I’m more open minded to other forms of eating under certain circumstances.
I’m currently 6 months pregnant with our fourth child. I found that my body has a very difficult time dealing with sugar of any kind when I’m pregnant. Since I’ve cut out grains, lentils, beans, and sugar (other than honey and maple syrup) I feel like a new person. Again, I’ll explain more later, but for now I just want to share some really amazing dessert and breakfast recipes.
After I eat I like a little bite of something sweet. I don’t need a ton, but a piece of dark chocolate goes a long way for me. Since I’m off sugar, or sugar substitutes, I need to be really careful where I get my chocolate. Turns out I can’t find it anywhere, so I make it myself, and it literally takes 2 minutes – not including the time to chill in the refrigerator.
To make this vegan you can substitute with xylitol.
Paleo Chocolate
Ingredients
- 1/2 cup coconut oil
- 3/4 cup cacao powder
- 3 tbsp honey
- 1/2 tsp vanilla extract
- A pinch of salt
Instructions
- Gently melt coconut oil in a saucepan over medium-low heat.
- Stir cocoa powder, honey, and vanilla extract, and salt into melted oil until well blended.
- Pour mixture into a candy mold or pliable tray.
- Refrigerate until chilled - about 1 hour.
